Yield: Gluten Free Potato Gnocchi in Basil Marinara Sauce (4 Servings)
Needed Kitchenware: Steamer, cooking pot, mixing bowl, non-stick cooking pan, large sauce pan
Potato Gnocchi
  • 4 medium Russet potatoes
  • ½ cup tapioca flour
  • ½ cup potato starch
  • ½ cup water
  • (optional) 1 tsp sea salt
Marinara Sauce
  • 26 oz tomato purée or crushed tomatoes
  • 6 garlic cloves, minced
  • 4 tbsp maple syrup
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • Handful fresh basil, minced
  • ¼ yellow onion, whole
  • (optional) ground black pepper, to taste
  • (optional) 1 tsp sea salt
Garnish
  • Fresh basil, chopped

Directions

  • Poke your potatoes with a fork or knife all around. Steam whole till you can easily poke a fork all the way through. This may take 45-60 minutes.
  • Meanwhile, place all the marinara ingredients in a sauce pan. Cook on medium heat till it bubbles then lower heat and allow to simmer for 20-30 minutes. When done, take the pot off the heat, remove onion, and discard the onion.
  • When the potatoes are done, allow them to cool and peel skin with a fork. In a mixing bowl, mash the potatoes till smooth. Add a bit of water, if needed.
  • Before you start preparing your gnocchis, start bringing your cooking pot of water to a boil.
  • Mix tapioca flour, potato starch, salt (if using), and water into your mashed potatoes. Kneed into a dough. This will get sticky! Add a small amount of water as needed to prevent sticking.
  • Form your gnocchis into a cylinder-like shape and set aside. Keep your palms and fingers wet to prevent sticking.
  • Boil the gnocchi in batches of 7-8. Drop in gnocchis into your pot of boiling water. When they float to the top, allow them to cook for 2 more minutes, and then remove with a slotted spoon.
  • Heat a large non-stick cooking pan to medium heat. Cook about 8 minutes each side. Serve with marinara sauce. Garnish with fresh basil.
