Yield: 14 4-inch Pancakes (4 Servings)
Needed Kitchenware: Mixing bowl, griddle or non-stick pan
  • 1½ cup Gluten-Free Flour (I used Bob's Red Mill 1:1 Gluten-Free baking Flour)
  • 1 tbsp baking powder
  • (optional) ½ tsp salt
  • 2 tbsp coconut sugar or maple syrup
  • 1 cup almond milk
  • ½ cup water
  • 2 tbsp olive oil, coconut oil, or melted vegan butter, plus extra for greasing the pan

  • In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  • Pour the milk, water, and oil into the bowl with the dry ingredients, stir until just combined. (A few lumps are okay; do not over mix or your pancakes won't be as fluffy.)
  • Heat a large griddle or pan over medium-high heat. Grease the pan with vegan butter or coconut oil and drop about ⅓ cup of the batter in. Cook until bubbles form, then flip and cook until golden brown on the other side, about 1-2 mins. Continue until no batter remains.
  • Serve with vegan butter, pure maple syrup, or your favorite fruit. I grabbed a pack of frozen fruits from my fridge and made a quick compote with maple syrup and chia seeds! Enjoy!
