Yield: Ginger Chili Margaritas (6 Servings)
Needed Kitchenware: Sauce pan, grater, strainer, cocktail shaker
  • 2 tbsp fresh ginger, grated
  • 2 red chili, sliced
  • 6 tbsp sugar
  • 6 limes
  • 300 ml (10.1 oz) tequila
  • Ice cubes
  • 200 ml water
  • (optional) 1 red chili, sliced, for garnish
  • (optional) 1 lime, sliced, for garnish

  • In a sauce pan place the ginger, chili, and sugar. Finely grate in the zest of 3 of the limes, then squeeze in the juice of all 6. Pour in 200 millileters of water. Heat over a medium heat for a few minutes until the sugar has dissolved. Once the mixture starts to steam remove from the heat.
  • Leave to cool completely to let the flavors infuse.
  • Strain the syrup into a measuring container, pressing the ginger and chilli against the sieve to extract extra flavour and juice. You should have 450 millileters total liquid, if not, add enough cold water to bring it up to the level.
  • For each cocktail, place a handful of ice cubes in a cocktail shaker. Add 75 ml of the syrup and 50 ml tequila. Shake until very cold, pour into a glass, adding extra ice if you like and garnish with a lime slide and chili.
Notes

Taste the chili to see how hot they are while preparing. If it's too spicy, discard the white membrane and all seeds.

For a sweeter drink, add an additional 2 tablespoons of sugar.
