I thought I'd jump on the bandwagon and give it a try as I was making sushi for some friends and had leftovers 😎 Definitely a very simple and delicious lunch, plus a great way to use up leftovers!

Yield: 1 Kimbap Sushi Sandwich (1 Servings)
Needed Kitchenware: Rice cooker or small covered pot
  • ½ cup sushi rice, uncooked
  • 1 tbsp rice wine vinegar
  • 1 tsp sugar
  • ¼ tsp salt
  • 1 nori sheet
  • 4 oz store bought teriyaki tofu
  • ¼ avocado, sliced
  • ¼ cup kimchi
  • ½ small carrot, cut into sticks

Directions

  • Cook the rice according to the package instructions in a rice cooker or small covered pot.
  • After the rice is finished cooking, allow the rice to cool while adding the vinegar, sugar, and salt, constantly mixing the rice to combine and allowing it to cool.
  • Place your nori sheet on a flace surface. Cut an incision from the centre of your nori sheet straight down to the base.
  • Place the toppings in each quarter of the nori: the tofu in the lower left, the avocado in the upper left, half the rice topped with kimchi in the upper right, and half the rice topped with the carrots in the bottom right.
  • Fold clockwise, press down, cut in half and enjoy!
