One of my family favorite recipes I cook every Thanksgiving. These have the perfect texture, packed with amazing creamy flavor of garlic, butter, and white truffle.

Yield: 1 Bowl of Mashed Potatoes (8 Servings)
Needed Kitchenware: Cooking pot, kitchen stand mixer or potato masher
  • ~3 pounds Russet potatoes (about 9)
  • 2 cloves garlic, minced
  • ½ cup soy milk
  • ¼ cup vegan butter
  • 2 tbsp chives, diced
  • 5 tsp salt
  • 2 tbsp white truffle oil
  • (Optional) top with extra melted vegan butter and chives

  • Wash, peel, and cute the potatoes into 1 to 2 inch cubes. Place potatoes into your cooking pot and cover with water. The water should cover at least 1 inch above the potatoes. Turn the heat on the stove and bring the water up to a boil. Add 2 pinches of salt to the pot.
  • The potatoes are done once you are able to easily pierce a potato with a fork. Once done, drain the potatoes and put them into the stand mixer bowl. If mashing by hand, put the potatoes into a large mixing bowl.
  • Put the cooking pot back on the burner you used with the stove turned off. Add the milk and butter to the pot and stir until they are melted.
  • Add the melted ingredients, garlic, and truffle oil into your bowl of potatoes. Mix/mash the potatoes until combined, but do not over-mash as it will turn the potatoes gummy. If using a stand mixer, be sure to stop the mixer and scrap down the sides of the bowl a few times. Add a couple pinches of salt while mixing/mashing.
  • The mashed potatoes are done when your desired consistency is achieved. (Optional) top with melted butter and chives to serve.

Garlic Truffle Mashed Potatoes

This is one of my favorite family recipes that I cook every single year for Thanksgiving. We cook this to get the perfect texture on your potatoes, how to really pack them full of amazing flavor!

What Does Truffle Mashed Potatoes Taste Like?

This mashed potato recipe tastes creamy, a little salty, a little garlic-y, and just plain special. The taste of truffle oil is enhanced from the starch, creaminess, and garlic in this recipe. But truffle oil itself really can't be accurately described by comparison to other things, but it does taste and smell earthy and pungent, a little like garlic, but different.

Some Secret Tips to Making Perfect Mashed Potatoes

Tip #1: Cut the potatoes roughly the same size so that they cook at the same time.

Tip #2: Put the potatoes in water at the same cold or room temperature and then turn on the heat to a boil. Do not submerge room temperature potatoes into boiling water. Starch reacts differently in different temperatures. Doing this technique will help the texture.

Tip #3: Test if the potatoes are done cooking by using a fork and seeing if the potato can be easily pierced by the fork.

Tip #4: After the potatoes are done cooking, do not put cold butter, cream, or milk into the hot potatoes. This will cause the potatoes to get slightly grainy in texture. It is best to warm up any liquid or fat ingredients first before adding them to the potatoes.

Tip #5: Do not over mash or mix! This will cause the texture to be gummy. Mix until you get your desired consistency and then stop.
