Yield: 1 Bowl Mashed Potatoes (8 Servings)
Needed Kitchenware: Mixing bowl, steamer, potato masher
  • 8-10 red-skinned potatoes
  • 4 cloves garlic
  • 1 tbsp coconot oil
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • fresh chives to serve

Directions

  • Peel some potatoes, leave some peel on. Place them into your steamer to cook for about 20-25 minutes. Test for doneness with a fork, if it goes through with ease then the potatoes are done.
  • Mince the garlic cloves and/or press them with your knife, a garlic crusher, or a mortar and pestle.
  • Prepare your chives or green onion to serve by dicing them.
  • In a large mixing bowl, combine your garlic, coconut oil, salt, and black pepper. Once the potatoes are done, add these to the bowl and mash until desired consistency is achieved. Top with your chives and serve!
