Needed Kitchenware: Mixing bowls, refrigerator
  • 3 cups green cabbage, cored and finely shredded
  • 1 cup red cabbage, cored and finely shredded
  • 1 cup carrot, finely shredded
  • ½ cup vegan mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar
  • ½ tsp celery seed
  • ½ tsp mustard powder
  • pinch of salt
  • pinch of black pepper

Directions

  • Prepare the cabbage and carrot in a large mixing bowl. Set aside.
  • In a small mixing bowl, add together the rest of the ingredients and mix well.
  • Add the sauce to the vegetables and mix very well until the vegetables are thoroughly coated. Chill in the refrigerator for at least 1 hour before serving.
Notes

Substitutions: You can substitute the vinegar for equal parts lemon juice for a total of 2 tablespoons of lemon juice.
