Yield: 1 Lemon Loaf Cake (8 Servings)
Needed Kitchenware: Mixing bowls, bread loaf baking pan, (optional) parchment paper, oven
Dry
  • 2 cups self-rising flour
  • 1 cup granulated sugar
Wet
  • 2 tbsp lemon juice
  • 1 cup almond milk
  • ⅓ cup coconut oil, melted
  • (optional) 1 tsp vanilla
Icing
  • 1 cup icing/confectioner's sugar
  • 2 tbsp lemon juice
Garnish
  • (optional) coconut flakes
  • (optional) lemon slices

Directions

  • Preheat oven to 175°C or 350°F. Line your bead loaf baking pan if needed.
  • In a bowl, mix the wet ingredients together.
  • In another large bowl, mix dry ingredients together.
  • Then pour the mixed wet ingredients into the dry mix. Gently fold until no clumps remain and the batter is thick.
  • Transfer the cake batter into your baking pan.
  • Bake in the oven for 35 mins until a knife inserted comes out clean.
  • Remove the loaf from the oven and allow it to fully cool before icing.
  • To make the icing, whisk the icing sugar and lemon juice in a mixing bowl until smooth and thick.
  • Spread the icing over the top of the loaf. (Optional) sprinkle coconut and sliced lemon on top to decorate.
Notes

If you do not have self-rising flour, you can make it if you have all-purpose flour on-hand. Use 2 cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt.

You can definitely try making this into muffins, cupcakes, or mini-loaves too - just reduce the cooking time by 15 minutes โœจ.
