Yield: 2 Bowls of Dan Dan Noodles (2 Servings)
Needed Kitchenware: Cooking pot, blender
Chinese Braised Mushrooms
  • 6-8 Shiitake mushrooms
  • 3 cups water
  • ½ inch of fresh ginger
  • 1 garlic clove
  • 1 cinnamon stick
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp Chinese black vinegar
  • 1 spring onion
Tahini Sauce
  • 2 tbsp tahini
  • 2 tsp vegan hoisin sauce
  • 2 tsp Chinese black vinegar
  • 2 garlic cloves
  • ⅓ cup water
  • 2 tbsp soy sauce
To Serve
  • 1 bunch of Asian green vegetables, your choice
  • 200g thick wheat noodles
  • chili oil
  • spring onions
  • toasted sesame seeds
Recipe Directions


  • Add all the ingredients for the Chinese braised mushrooms into your cooking pot and bring it to a boil. After it reaches to a boil, reduce it to a simmer. Cook for additional 5 minutes until mushrooms are tender and juicy. Remove the mushrooms from the braising stock and set aside to slice. (Save the braising stock for another meal, can be kept in your refridgerator for up to 3 days after letting it cool.)
  • In a blender, add all the tahini sauce ingredients and blend until smooth. Set aside.
  • Bring a cooking pot of water to a boil, (optional add a pinch of salt), and cook the vegetables together the wheat noodles until noodles they are tender. Drain and pop the noodles into your serving bowls.⁣
  • Assemble: add the sliced mushrooms, tahini sauce, chili oil, spring onions, and sesame seeds onto the noodles. Toss and serve warm!⁣
