Tomato soup lovers rejoice! This version roasts and sautés all the ingredients to lock in deep flavors with hints of ginger and maple syrup, finished with super creamy soy skyr, a filtered yogurt.

Yield: Tomato Soup (4 Servings)
Needed Kitchenware: Oven, baking sheet, large cooking pot, hand-held blender or high speed blender
  • 6 large tomatoes, halved
  • 2 onions, peeled and cut into quarters
  • 1 head garlic, halved
  • 3 cm fresh ginger, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 500 ml vegetable broth
  • 400 g tomato purée
  • 400 g unsweetened soy skyr or other thick vegan yogurt
  • 1 tbsp maple syrup
Recipe Directions


  • Preheat oven to 355°F or 180°C.
  • Place halved tomatoes, onions, garlic head, and ginger on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Bake for 40 minutes
  • Transfer all the ingredients to a large cooking pot, discarding any husk from the garlic. Sauté everything in the pot for a few minutes then deglaze the bottom of the pot with the vegetable broth and tomato purée. Then blend all ingredients into a soup. You can use a hand-held blender or transfer to a high speed blender.
  • Place into serving bowls and stir in the soy skyr and the maple syrup on top. Served as shown with fresh herbs, chili flakes, and grilled bread.
