Yield: Creamy Lemon Garlic Pasta (2 Servings)
Needed Kitchenware: Cooking pot, frying pan, mixing bowl
  • 200 g pasta of choice
  • 1-4 tbsp reserved pasta cooking water
  • 3 garlic cloves, minced
  • 1 tbsp vegan butter or olive oil
  • ½ small lemon juiced
  • the zest from ½ small lemon
  • 6 tbsp coconut milk
  • 1 tsp corn starch
  • 100 ml vegetable stock
  • ⅛ tsp ground black pepper
  • pinch of salt, or to taste
  • handful of basil, chopped

Directions

  • ⁣Cook your favorite pasta according to package instructions in a large pot of boiling, salted water.
  • Meanwhile, in a bowl, combine lemon juice, coconut milk, corn starch, vegetable stock, salt, and pepper. Whisk until there are no lumps.
  • In a frying pan over medium-high heat, add the vegan butter, or olive oil if using instead. Toss in garlic and cook until fragrant and soft.
  • Pour sauce into frying pan and simmer until it thickens.
  • Drain the pasta when finished cooking, reserving a little cooking water. Add pasta to frying pan with sauce. Toss until everything is coated. Add a little of the pasta water, if sauce is too thick. Add chopped basil and stir.
  • Serve hot with lemon zest. Enjoy!
