Char-grilled eggplant and a variety of ingredients come together in a creamy, thick sauce this is smoky, savory, and deeply complex. Tossed in your favorite pasta and then topped with a toasted breadcrumb combined with herbs, butter, and pecans.

Yield: Eggplant Pasta (4 Servings)
Needed Kitchenware: [Gas range stovetop, barbecue, oven, or campfire], colander, mixing bowls, blender, food processor, frying pan
Sauce
  • 1 large eggplant
  • 1 tbsp salted vegan butter
  • 3 garlic cloves, sliced
  • 1 onion, diced
  • 50 g cashews, soaked overnight or soaked in very hot water for at least 30 minutes
  • Juice from ½ lemon
  • 150 ml vegetable stock
  • Salt, to taste
  • Ground black pepper, to taste
Breadcrumbs
  • 41 g of baguette bread, cubed
  • 20 g pecans, toasted
  • 1 tbsp nutritional yeast
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp salted vegan butter
  • Salt, to taste

Directions

  • Ideally, cook the eggplant over the open flame of your gas range, barbecue, or campfire for 8 minutes on each side until soft on the inside and charred on the outside. Optionally, you can roast the eggplant in the oven whole on a lined baking try on the middle rack at 475°F or 250°C for 45 minutes, flipping once while cooking. The eggplant should be blackened, blistered, and soft when done.
  • Using tongs and a knife to handle, cut the eggplant in half, and scoop out flesh. Place in a colander over a bowl for an hour or so to drain.⁣⁣
  • While that drains, cook the garlic and onions in butter in your frying pan until soft.⁣
  • Add the eggplant, garlic, onions, drained cashews, lemon juice, vegetable stock, salt, and pepper to a high speed blender. Blend until smooth. Taste and adjust seasoning to suit your preference.
  • Combine the baguette cubes, pecans, nutritional yeast, and salt in a food processor. Pulse until crumbs form.
  • In your frying pan, over medium heat, melt the butter and add the breadcrumb mixture. Stir often and cook until mixture is golden. Transfer to a bowl and mix in the dill and parsley.
  • In your frying pan, add the linguine and sauce. Toss and cook until heated through. Adjust seasoning to suit your taste.
  • Sprinkle with breadcrumbs and enjoy hot!⁣
