Baked stuffed mushrooms make a terrific appetizer, combining savory fillings with juicy mushrooms. This recipe creates tempeh bacon from scratch and mixes it into a cream cheese mixture creating a complex, delicious appetizer!

Yield: 8 Stuffed Mushrooms (4 Servings)
Needed Kitchenware: Mixing bowl, oven, baking sheet, parchment paper
  • 4 oz tempeh
  • ½ tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 pinch sea salt
  • 1 tsp smoked paprika
  • 1 dash cayenne
  • 8 cremini mushrooms
  • ¼ cup or 55g vegan cream cheese
  • ¼ cup breadcrumbs
  • 2 tbsp finely chopped chives
Recipe Directions


  • Slice the tempeh in half widthwise. Then slice each square into strips.
  • In a bowl, whisk together the oil, soy sauce, maple syrup, salt, smoked paprika, black pepper, and cayenne.
  • Add the tempeh and toss to coat. Marinate for 10-15 minutes.
  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Transfer tempeh (reserving excess marinade) to the parchment-lined baking sheet and arrange in a single layer.
  • Bake for 10 minutes, then remove from the oven, flip, and brush generously with reserved marinade. Bake for 8-10 minutes more, or until browned. Remove and set aside to cool.
  • Combine the cream cheese, breadcrumbs, and chives.
  • Crumble the cooled tempeh into the cheese mixture and mix until just combined.
  • Prepare the mushrooms by cleaning them using a clean dish towel or paper towel and remove the stems. Stuff each mushroom with this mixture. Place on the parchment-lined baking sheet and cook for 10 minutes.

For a larger portion for 2 people, use 2 portobello mushrooms with the same filling and cook for 15 to 20 minutes.

Vegan Stuffed Mushrooms

Oh yes, cream cheese and bacon stuffed mushrooms! This is an easy crowd favorite for everyone - fatty, cheesey, with a sweet and smoky bacon flavor. Perfect for a fancy appetizer, to snack on, or to even use as a side dish.

Easy to double and easy to make larger portions as well. If you want a larger portion, use 2 portobella mushrooms instead.

What mushrooms are best for stuffed mushrooms?

White button, cremini, and portobella are the best im my opinion. Make sure you are able to visibly see, inspect, and choose each mushroom individually to check for blemishes. With an appetizer like this, you will be able to see any imperfections or black spots.

Vegan Cream Cheese

YES! I'm so glad we have so many options to choose from today. I used VioLife myself but you can use any vegan cream cheese available in your area. Since we aren't using it cold or expecting it to hold its shape, it's safe to use your favorite brand without worrying about the ingredient composition.

Vegan Bacon

We're making bacon from scratch in this recipe using tempeh, which is fermented soy beans. Once cutting the tempeh, we marinate it in a mix of sweet and savory spices, and then bake it to perfection. We then crumble it up and put it inside of the mushroom stuffing mix. It's so nice to taste some bits of this tempeh bacon in with the cream cheese!


Store these in an air-tight container in the refridgerator for up to 3 days after making. I don't see how you can have any leftovers so I'm assuming you're making these in advance! To serve, reheat in the oven.
