Yield: Pasta (4 Servings)
Needed Kitchenware: Kitchen brush, oven, roasting pan, blender, cooking pot, large non-stick pan
  • 500g tortiglioni or pasta of your choice
  • 1 buttercup squash, halved with seeds removed
  • ¼ cup nutritional yeast
  • ¼ tsp ground nutmeg
  • ½ tsp garlic powder
  • (optional) pinch of ground cayenne pepper
  • oat milk, as necessary for thinning sauce
  • 1 red onion
  • 1 red bell pepper
  • 4 handfuls of spinach
  • 3 tbsp vegan butter, divided (I used Le Grand)
  • salt and ground pepper to taste
Recipe Directions


  • Preheat oven to 400°F (200°C).
  • Brush prepared squash with 1 tbsp melted vegan butter and season with salt and pepper, to taste. Roast in preheated oven for 45 minutes. After 45 minutes check for doneness with a fork to see if it is tender and cooked. Cook longer if needed.
  • After the squash is done, scoop out the flesh and add into a high speed blender. Add to the blender the nutritional yeast, nutmeg, garlic powder, cayenne powder, and salt and pepper, to taste.
  • Add a little oat milk and blend until very smooth. Add more oat milk to thin to reach the consistency you would like. Set aside.
  • Cook pasta in a cooking pot of salted boiling water. Cook until nearly done.
  • At the same time, in a non-stick pan, cook the red onion and bell pepper in 2 tbsp vegan butter until tender. Season to taste. When done, add spinach. Keep stiring until spinach starts to wilt.
  • When pasta is nearly done, drain the pasta and reserve a little of the water. Add the pasta, cooking water, and sauce to your pan. Stir and cook for a couple minutes until everything is hot.
  • Serve warm and top with some additional nutritional yeast, enjoy! Optionally, you can sprinkle some hemp seeds on top, as shown in the photo.

Buttercup squash is really unique, but if you need a substitute you can use acorn, sugar pumpkin, butternut squash, hubbard squash, or even sweet potatoes. You'll need to substitute about 2-3 pounds, which is what on average a buttercup squash weighs.
