Yield: 1 Cheese Wheel (16 Servings)
Needed Kitchenware: Blender, saucepan, container with lid, refrigerator
Cheese
  • 1 cup raw cashews, soaked in warm water for 30 minutes and drained
  • ¼ cup fresh lemon juice
  • ¼ cup water
  • 1 small red bell pepper, chopped
  • 2 tbsp red onion, chopped
  • 2 garlic cloves
  • ½ tsp mustard powder
  • 2 tbsp onion powder
  • 1 tsp sea salt
Agar Gel
  • 4 tbsp agar flakes or agar powder
  • ½ cup cold water

Directions

  • Place all the cheese ingredients in a blender and process until smooth and creamy.
  • To make the agar gel, whisk the cold water and agar together in a saucepan. Let it soak for 5 minutes and then bring to a boil. Lower the heat and simmer, whisking often, for 5-8 minutes.
  • Once the agar is done, quickly transfer it to the blender with the cheese mixture and process until smooth. Pour the mixture into a container, cover, and refrigerate for at least 2-4 hours, ideally overnight, to let the cheese set.
