Fluffy, tasty, and gluten free carrot cake pancakes. Jazz up your normal pancakes with a few extra ingredients to create these delicious, healthy, and nutritious breakfast pancakes.

Ingredients

Yield: 2-4 Pancakes (2 Servings)
Needed Kitchenware: Blender, grater, non-stick cooking pan
  • 1¼ cup of oats (or 1 cup flour of your choice)
  • 1 cup soy milk
  • 1 large banana
  • pinch of sea salt
  • 1 tsp cinnamon powder
  • ½ tsp ginger
  • pinch of nutmeg
  • ¼ cup of chopped walnuts
  • 1 small carrot, grated
  • ¼ cup of sultanas (golden raisins)
  • (Optional) frying oil
Recipe Directions

Directions

  • If using oats for flour, place the oats into your blender and blend until the oats are smooth. Now add the milk, banana, salt, cinnamon, ginger, and nutmeg. Blend for 30 seconds.
  • Add in the walnuts, grated carrot, and raisins and stir in to combine, do NOT blend them together.
  • If using oil, add to your non-stick pan on medium heat. Once heated, cook your pancakes 1-2 minutes, flip, and cook 1 minute longer on the other side.
  • (Optional) Serve with your favorite toppings like dairy free yoghurt, fruit, maple syrup, and nuts. Enjoy!
Notes

You can use any flour of your choice for this recipe!

You can omit the oil if your pan is non-stick to keep it whole food.
