Needed Kitchenware: Mixing bowl, square baking dish, parchment paper, sauce pan, blender, oven
Base & Crumble Topping
  • 215 g all-purpose flour
  • 90 g oats
  • 30 g coconut flour
  • ¼ tsp cinnamon powder
  • 113 g maple syrup
  • 80 ml (~5½ tbsp) coconut oil
  • 60 g almond butter
Blueberry Layer
  • 300 g fresh blueberries
  • 2 tbsp maple syrup
  • 1 tbsp tapioca flour
  • 1 tsp vanilla
  • ¼ tsp cinnamon powder

Directions

  • Preheat oven to 350°F or 180°C. Line square baking dish with greased parchment paper.
  • In a bowl, combine all the base and crumble topping ingredients until a moist, crumbly dough forms.
  • Press ⅔ of the crumble into the bottom of your pan. The remaining ⅓ is for the topping and should be refrigerated while you complete the following steps.
  • Bake the base layer for 10 minutes.
  • While crust bakes, combine the blueberry layer ingredients in a sauce pan and cook until berries soften, release their juice and reduce a little.
  • Blend berry mixture, return to sauce pan and cook until sauce thickens.
  • Pour evenly over pre-baked base layer.
  • Top with remaining crumble and bake for 25-30 minutes.
  • Allow to cool completely before cutting into squares.
Notes

If using frozen blueberries, defrost and drain the liquid before weighing.
