Yield: Ginger Beet Cocktail (10 Servings)
Needed Kitchenware: Large container or pot with cover, strainer
  • 250 g cooked beets, peeled, grated
  • 5 cm fresh ginger, grated
  • 2 lime peels
  • 150 g (¾ cup) light brown sugar
  • 500 ml (17 oz) vegan vodka
  • Soda water
Recipe Directions


  • Put the beets, ginger, 1 lime peel, light brown sugar and vodka in a large container. Cover and steep for at least 2 hours, stirring occasionally.
  • Strain the liquid, discarding the beets, ginger, and lime peel.
  • To serve, pour 60 millileter (2 ounces) of the beet mixture into each glass with ice and top up with soda water.
  • Garnish with extra lime peel to finish. Enjoy!

You can buy pre-cooked beets as an option, but if cooking the beets at home, try to roast them in the skin to maximize their flavor. Make sure they are fully cooled before using.
