Yield: 6 Beet Burger Patties and Cole Slaw (6 Servings)
Needed Kitchenware: Grater, large cooking pan, food processor, baking tray, refridgerator, barbecue, large mixing bowl
Burger Patties
  • 2 tbsp rapeseed oil
  • 1 red onion, finely chopped
  • 1 medium beet, finely grated
  • 2 400g cans red kidney beans, drained and rinsed
  • 400g can cannellini beans, drained and rinsed
  • 2 garlic cloves, crushed
  • Handful flat leaf parsley, finely chopped
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • Zest of 1 lemon
  • 50g dried breadcrumbs
Summer Slaw
  • ½ small red cabbage, finely shredded
  • 2 medium carrots, coarsely grated
  • 1 red onion, thinly sliced
  • Handful flat leaf parsley, finely chopped
  • Juice of 1 lemon
To Serve
  • 6 burger buns
  • 2 ripe avocados

Directions

  • Prepare all the burger patty ingredients per the ingredient list details and have them all ready for use.
  • Heat 1 tbsp of the rapeseed oil in a large cooking pan over high heat.
  • Add the onion to the cooking pan and cook for 3 minutes until the onion starts to soften.
  • Add the grated beet, kidney beans, and cannellini beans to the pan. Cook, while stirring frequently, until the beans start to crisp. Turn off the stove and remove the pan from the burner.
  • Carefully transfer the contents of the pan mixture to a food processor. Add the remaining burger patty ingredients of the garlic, parsley, coriander, cumin, zest, and breadcrumbs. Blend until it starts to stick together but still has some texture.
  • Shape this mixture into 6 burger patties and place on a baking tray. Place into the refridgerator to chill for at least 1 hour.
  • When ready to grill, fire up the barbecue.
  • Meanwhile, prepare all the summer slaw ingredients per the ingredients list details. Mix together all of these for the slaw and set aside in a large mixing bowl.
  • Brush or rub the burger patties with the remaining 1 tbsp oil and grill on the barbecue for 8-10 minutes each side, until hot and lightly charred.
  • After the patties are done, toast the burger buns lightly on each side on the barbecue.
  • Spoon some of the slaw onto the buns, top with the burgers, then finish with the mashed avocado. Serve any remaining slaw on the side.
Notes

You can substitute the rapeseed oil for any high-heat oil of your choice.

To make this recipe gluten-free, choose gluten-free burger buns and use gluten-free breadcrumbs. If you cannot find gluten-free breadcrumbs, use the same amount of rolled oats.
