Yield: 12 Banana Chocolate Chip Muffins (12 Servings)
Needed Kitchenware: Oven, 12-muffin pan, mixing bowls
  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1 cup mashed banana
  • 4 tbsp maple syrup
  • 3 tbsp coconut oil
  • ¼ cup almond milk
  • ¾ cup oat flour
  • ½ cup plant-based vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • ¼ cup vegan dark chocolate chips

Directions

  • Mix together the ground flaxseed and water and set aside for a couple minutes.
  • Preheat the oven to 350°F or 175°C. Prepare your muffin pan if necessary.
  • In a bowl, combine the mashed bananas, the flaxseed mixture, milk, maple syrup, and coconut oil until combined.
  • Add in oat flour, protein powder, baking powder, baking soda, cinnamon and ginger. Stir until combined. Fold in chocolate chips.
  • Pour batter into the muffin pan cups, filling ¾ of the way. Do not overfill!
  • Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin.
