Yield: 4 Savory Asparagus Crepes (2 Servings)
Needed Kitchenware: 2 Non-stick pans, sauce pan
Filling
  • 1 bunch asparagus
  • 1 lemon
  • 200 g smoked tofu
  • 2 tbsp oil
  • salt, to taste
Crepe Batter
  • 200 g all-purpose flour
  • 50 g lupine flour
  • 300 ml almond milk
  • 200 ml water
  • 1 tsp salt
  • 1 tsp baking powder
Hollandaise Sauce
  • 15 g vegan butter
  • 15 g all-purpose flour
  • 150 ml almond milk
  • 50 ml white wine
  • 1 tsp mustard
  • Pinch of nutmeg, ground
  • Salt, to taste
  • White pepper, ground, to taste
  • (optional) 1 tbsp nutritional yeast
To Serve
  • Chives, chopped
  • Parsley, fresh, chopped

Directions

  • Prepare your asparagus by cutting off the woody ends of the asparagus, peeling the outside near the ends if necessary. Sauté the asparagus with lemon slices in oil over medium heat until golden brown. Once done, season with salt, and set aside.
  • In a mixing bowl, whisk the crepe batter ingredients together until smooth. Heat a non-stick pan on medium-low heat. Once preheated, pour ¼th of the batter at a time into the pan. Quickly pick up the pan and swirl the batter around the pan until it covers the bottom of the pan, making the batter thin. Put the pan back down on the burner and cook each side until just done. Move finished crepe to be plated. Repeat until done with all the batter.
  • To make the sauce, in a saucepan over medium heat, melt the vegan butter, sauté the flour using a whisk. Then add the almond milk and wine and bring to the boil. Add the rest of the ingredients and simmer over low heat.
  • Dice the smoked tofu and fry until heated through.
  • Fill the crepes with the asparagus and smoked tofu, roll up, and serve with sauce and toppings.
Notes

Substitutes: You can substitute lupine flour for soy, chickpea, almond, coconut, or all-purpose flour. Lupine flour is made from sweet lupin beans and is quite unique. You should not use lupin flour is you are allergic to nuts.
