Fresh Almond, Hemp, and Pomegranate Cheese

I was inspired after being given fresh pomegranates so decided to share this basic fresh cheese recipe! It's an almond cheese which I added hemp seeds and covered it in the pomegranates to keep them fresh and juicy. 😊

Yield: 1 Cheese Wheel (6 Servings)
Needed Kitchenware: Blender, milk bag or thin cloth, strainer, mixing bowl, gauze, cheese mold (optional)
  • 200 g raw almonds
  • 50 g raw peeled/hulled hemp seeds
  • 1 heaping tbsp of unpasteurized sauerkraut
  • ½ tsp salt
  • 2 tbsp lemon juice
  • Water
  • Pomegranate seeds
  • (Optional) vegan coconut honey
Recipe Directions


  • Soak the almonds for about 12 hours in filtered water. Then drain and peel the almonds.
  • Put the almonds in a blender with a splash of water. Blend to a purée as fine as possible, adding more water as needed. The idea is to use as little water as possible, be careful not to add more than you need to blend the purée.
  • Once you get the fine cream, add the sauerkraut and blend some more to integrate. Now add the hemp seeds and mix by hand.
  • Transfer to a milk or thin cloth, press a little with a kot and hang or leave on a strainer to release water. Leave it in a dark place for 24-48 hours to ferment. You will smell the ferment clearly when that happens, believe me.
  • Transfer this paste, which is thicker now, to a bowl and add the salt and lemon juice. Mix well. Transfer to a damp gauze and place in the refrigerator for about 24 hours.
  • Now you can shape it in a perforated cheese mold so that it continues to drain, with a plate underneath for about 3 days.
  • Take the cheese out of the mold and coat completely with pomegranate seeds. (Optional) Coat or sprinkle vegan coconut honey all over the wheel to serve.

The sauerkraut needs to be unpasteurized as to not kill the bacteria since we need the bacteria to ferment the cheese.
